These sardines are distinguished by a specific fishing method. They are caught using the Xeito technique, a traditional technique involving the use of a net that the boat throws loosely and catches the sardines as they pass through it.

The sardines are caught by the head, which prevents the product from bruising and damaging the raw material, as is the case with other fishing methods. They are sold at the fish market early in the morning and the product is prepared fresh the same day.

The sardines are cleaned and gutted by hand, then steamed to the desired consistency. They are then packed one by one and covered with extra virgin olive oil until the container is overflowing.
