They come from Rías Baixas, mainly from Rías de Arousa in Galicia in the north of Spain. It is bought on rafts to go further inland, farther from the source, where there are more nutrients, and therefore where the best specimens are found. They are cleaned one by one. They are standardly graded by color and size and are sealed with varietal oil. They are packaged natural, and they are complemented by a 100% natural marinade. La Brujula mussels in escabeche are soft in texture and spicy in taste.
