The distinguishing feature of these sardines is their method of fishing. They are caught using the techniques of Xeito, they support the technique that involves using a mesh fabric that the boat drifts and catches these sardines as it flows through the net. They are hooked into the effects, thus preventing the product from bruising and damaging the damage, as is the case with other fishing methods. This sardine is offered at the fish market early in the morning and the product is fresh the same day. These sardines are cleaned and gutted with help, and then steamed to obtain the desired. They are individually wrapped and flooded with extra virgin olive oil until they are overflowing. These sardines are unique from La Brújula’s gems.
