Grown in the Ebro river valleys and selected for their small size to ensure they contain optimal freshness of flavour. Harvested as quickly as possible to preserve maximum quality, they are peeled and processed entirely by hand according to artisanal methods.

They are then packed without any addition of preservatives except for the olive oil in which they are preserved.
