It comes from Galicia Rias, and more precisely from Noia Ria, whose location is the source of the highest quality cockles.

These mussels are only caught in season and when they have reached the right size. The pork neck season lasts only a few weeks in September and October. They are packed by hand depending on size and uniformity. This careful process produces cockles with an attractive white flesh with a touch of yellow, a sure sign of their freshness and origin.

The cleaning and cleaning of the mussels is carried out in an artisanal manner and is carried out by “double cleaning” to ensure that they do not contain traces of sand. The cooking and packaging process is carried out at high speed to keep the cockles perfectly fresh and full of flavor.
